TOFU WITH PUNJAB SAUCE

Ingredients

1 medium onion chopped
2 tablespoons curry powder
1/2-cup ghee or butter
1-cup ripe chopped tomatoes (about 3 medium or you can use 1 8oz. can tomato sauce, is not quite the same as the ripe tomatoes, but works in a pinch)
½ tsp ground ginger
Salt and pepper to taste
1/8-cup fresh cilantro, chopped, plus extra for garnish
3/4-cup hot water
½ cup finely chopped spinach.
1 ½ lb. Tofu, cut in medium size squares.

In a large skillet, melt ghee or butter and sauté onions till translucent. Add curry powder and sauté 3 more minutes. Then add tomatoes, cilantro and spices. Cook for 5 minutes. Add hot water and spinach. Simmer for about 15-20 minutes or until sauce is of desired consistency. Then add chopped tofu. Simmer for about 10 minutes. Top with extra cilantro. Serve over rice, or with pita bread.
