Oatmeal Cookies
4 Cups Rolled Oats
1 Cup Toasted Nuts
2 Cups Whole-wheat Pastry Flour
3 tsps. Baking Powder
2 tsps. Cinnamon
½ tsp. Salt
2 Cups Raisins
½ cup Maple Syrup
2 Sticks Butter melted or 1 cup Oil
4 Eggs or 1 Cup Egg Substitute
2 tsp. Vanilla
1/4 Cup Water or Orange Juice
Mix together all the dry ingredients in mixing bowl. Beat together the melted butter or oil, maple syrup, eggs, vanilla, and water in another bowl.
Add wet ingredients to dry and mix together well. Drop cookies by spoonful on to cookie sheet with Silpat or parchment paper. Bake at 350* for 20-25 minutes until lightly browned. Makes about 3 dozen cookies.
Egg Substitute: Combine one part flax seeds to three parts water and blend until flax seeds are completely decimated. This should be the consistency of eggs. Use ¼ cup in place of each egg in cookie, muffin or cake recipes.
