Crunchy Granola
8 cups rolled oats
1 cup dried coconut
¼ cup sesame seeds
¼ cup pumpkin seeds
¼ cup sunflower seeds
½ cup almonds
½ cup cashews
½ cup coconut or canola oil
½ cup maple syrup
1 tablespoon vanilla extract
2 cups dried fruit
Mix dry ingredients in large bowl. Add maple syrup, vanilla and oil and mix well. Spread mixture on two large oiled sheet pans and bake in 325* oven for 20 minutes on two racks. Remove from oven and stir, then replace on opposite racks as before and bake an additional 20 minutes. Add dry fruit and mix well. Let cool completely before storing in tightly covered container.
Vary ingredients according to tastes.
