Bran Flaxseed Muffins (10 muffins)

  • ½ cup wheat bran
  • ½ cup freshly ground flax seeds (use electric coffee grinder)
  • 1 cup whole wheat bread flour
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt

  • 1 egg
  • 2 tbsp. canola oil
  • 2 tbsp. molasses
  • 2 tbsp maple syrup
  • 1 cup buttermilk
  • ¾ cup raisins

Preheat oven to 350*. Combine all the dry ingredients in a large mixing bowl and mix well.

In another bowl combine all the wet ingredients and beat together well. Add the liquid ingredients to the dry mixture and stir together just enough to blend well. Add raisins and mix well.

Spoon into a well oiled muffin pan filling each cup about two thirds full. Bake 15-20 minutes at 350* until a toothpick comes out clean from the middle of a muffin.
