Beth's Pasta Salad
(Got this in Australia from a friend who got it from a Greek friend)

INGREDIENTS:

  • 1 lb Penne Pasta
  • 1- 4 oz or 6 oz container Basil Pesto ( See also our recipe for Pesto Sauce)
  • 1/2 lb Sun-dried Tomatoes, drained & chopped or 1/2 lb Roasted Red Peppers, chopped
  • 1/3 lb Greek Black Olives, sliced
  • 1/2 lb Feta Cheese, cubed

DIRECTIONS:

  1. Cook pasta according to directions. Drain
  2. Stir pesto into pasta.
  3. Add other ingredients and mix well.
  4. Serve hot or refrigerate and serve cold.
