Beth's Pasta Salad
(Got this in Australia from a friend who got it from a Greek friend)
INGREDIENTS:
- 1 lb Penne Pasta
- 1- 4 oz or 6 oz container Basil Pesto
( See also our recipe for Pesto Sauce)
- 1/2 lb Sun-dried Tomatoes, drained & chopped or 1/2 lb Roasted Red Peppers, chopped
- 1/3 lb Greek Black Olives, sliced
- 1/2 lb Feta Cheese, cubed
DIRECTIONS:
- Cook pasta according to directions. Drain
- Stir pesto into pasta.
- Add other ingredients and mix well.
- Serve hot or refrigerate and serve cold.
